Flipturn Flapjacks Makes 10 five-inch pancakes For starters, try this recipe for lasting pre-game carbs:
1 egg, separated 1. Beat the egg white with an electric mixer until stiff peaks form. Set aside. 2. In a large bowl, combine the egg yolk, dry pancake mix, buttermilk and water. Mix thoroughly with a whisk. Gently fold the egg white into the batter.
3. Heat a griddle or large frying pan to medium-high and coat the surface with a small amount of oil. Pour enough batter onto the griddle to form a 5-inch-wide pancake. When the pancake has cooked on the bottom (look for bubbles to form around the edges), flip with a spatula and cook the other side. Keep cooked pancakes in a warm oven until ready to serve.
