He's the granddaddy of sushi chefs, the mentor of many, an entertainer, piscatorial encyclopedia and, to legions of fans, the undisputed king of the local sushi scene. He's Shiro Kashiba, and the best seats at his compact corner shop are at the sushi bar, where putting yourself in the master's hands can result in a memorable meal. Table service may be spotty, but carefully sourced seafood and specialties like spicy tuna poke and black-cod kasuzuke make up for that shortcoming.
