Recipe: Sherry Vinaigrette
4 teaspoons sherry vinegar
1 tablespoon shallots (minced)
1 tablespoon chives (minced)
¼ cup extra virgin olive oil
Kosher salt and freshly ground black pepper, to taste
In a small mixing bowl combine the vinegar, shallots and chives. With a whisk, slowly incorporate the olive oil into the mixture. Season to taste with salt and pepper.
