Recipe: Walla Walla Sweet Onion Purée

6 tablespoons unsalted butter

1 small (about 8 ounces) Walla Walla sweet onion, peeled and sliced

Sea salt and freshly ground white pepper, to taste

¾ cup vegetable broth or water

¼ teaspoon fresh thyme leaves, minced

Melt the butter in a sauté pan and cook the onions with salt and pepper, stirring until lightly caramelized, about 30 minutes. Stir in the broth and thyme and cook until the liquid is reduced by a third. Purée the cooked onions in a food processor until smooth.
