Recipe: Twinks Tropicale

:- Twinkies

- Pineapple juice

- Room-temperature cream cheese

- Powdered sugar

- Fresh lime(s)

- Shredded coconut (optional)

- Nuts of choice, chopped (optional)

Unwrap the Twinkies and cut each into fourths. The pieces will be about one-inch square.

Pour unsweetened pineapple juice into a shallow saucer.

Dip the Twinkie pieces into the juice, making sure to moisten each side. Place the pieces onto a foil-lined cookie sheet and freeze for one hour.

Zest the limes. Mix the zest with the coconut and set aside.

While the pieces freeze, make a cream-cheese frosting by whipping the cream cheese until soft. Add powdered sugar to the desired consistency and taste. Add lime juice to taste. Set frosting aside in a shallow bowl.

Remove the frozen Twinkie pieces from the freezer.

Cover, as desired (one side, all sides!) with the frosting.

Dunk the frosted side(s) into the coconut and nuts, as desired.

Eat immediately for a burst of icy cool pineapple flavor. Let sit at room temperature for an hour before eating if you prefer a more cakelike treat.
