Makes 4 servings

1/2 cup sugar

3 tablespoons cornstarch

1/8 teaspoon salt

2 1/2 cups milk

2 (1 ounce) squares unsweetened chocolate, cut up

1 teaspoon vanilla

1. In a 2-quart glass bowl, mix together sugar, cornstarch and salt until well blended. Gradually whisk in milk until cornstarch is completely dissolved. Add chocolate.

2. Cook in the microwave on high for 7 to 9 minutes, whisking every 2 minutes until mixture is cooked through, smooth and thickened.

3. Whisk in vanilla. Pour into 4 individual serving dishes. Cover with plastic wrap to prevent a skin from forming on top. Refrigerate until cold.
