Recipe: Sake Refresh

Makes 1 drink

1 sprig fresh mint

4 slices fresh cucumber

¾ ounce simple syrup* (see note, below)

1 ½ ounces vodka

½ ounce sake

¾ ounce fresh lime juice

Garnish: thin slice cucumber

Tear mint sprig and drop into a cocktail shaker. Add 4 cucumber slices and simple syrup. Hand-press with a muddler. Add vodka, sake and lime juice. Fill shaker with ice, and shake vigorously for 6 seconds. Strain into a chilled martini glass. Garnish with a cucumber slice.

*Bar-Chef Note: Simple syrup is available at bar-supply stores. Or, to make it, combine 2 cups sugar and 2 cups water in a small heavy pan. Bring to a boil. Boil for 1 minute. Remove from heat and let cool. Bottle and store at room temperature until needed. Keeps indefinitely.
