Recipe: French Peach Fizz

Makes 1 cocktail

1 ½ ounces peach vodka

½ ounce simple syrup* (see note, below)

½ ounce fresh lemon juice

1 large sprig fresh tarragon

2 ounces Champagne

Garnish: tiny sprig fresh tarragon or peach slice

Fill a cocktail shaker with ice and add peach vodka, simple syrup and lemon juice. Tear and drop in the tarragon. Shake until very cold, at least 10 times. Strain the drink into a large martini glass and top with Champagne. Garnish with tarragon or peach.

*Bar-Chef Note: Simple syrup is available at bar-supply stores. Or, to make it, combine 2 cups sugar and 2 cups water in a small heavy pan. Bring to a boil. Boil for 1 minute. Remove from heat and let cool. Bottle and store at room temperature until needed. Keeps indefinitely.
