Recipe: Apple Crumb Pie

Makes one 9-inch pie

Basic Pie Pastry for a 9-inch pie crust

Filling:

6 cups peeled, sliced apples

2 tablespoons lemon juice

½ teaspoon cinnamon

½ teaspoon nutmeg

1 tablespoon cornstarch

¼ cup granulated sugar

2 tablespoons maple syrup

Crumb Topping:

½ cup all-purpose flour

3 tablespoons butter

2 tablespoons maple syrup

1. Prepare pastry. Roll out and fit into a 9-inch pie pan. Crimp top edge and chill until ready to fill.

2. To prepare filling: Toss apples with lemon juice, cinnamon, nutmeg, cornstarch and sugar. Add maple syrup and mix well. Pour into pie shell.

3. To prepare topping: Mix flour and cinnamon. Cut in butter until mixture resembles coarse meal. Sprinkle over apples in pie shell. Drizzle maple syrup over all.

4. Bake pie in preheated 425-degree oven for 10 minutes. Reduce heat to 350 degrees and bake 35 minutes longer, or until crust is golden brown and apples are tender. Serve warm or at room temperature.
