Recipe: Dutch Pancakes

Put butter in a 3-to 4-quart skillet and place in a preheated 425-degree oven. While butter melts, quickly mix batter in blender or food processor. Whirl eggs at high speed for 1 minute, until light and lemony...

Serves 4

- 1/3 cup butter

- 4 eggs

- 1 cup milk

- 1 cup all-purpose flour

1. Put butter in a 3-to 4-quart skillet and place in a preheated 425-degree oven.

2. While butter melts, quickly mix batter in blender or food processor. Whirl eggs at high speed for 1 minute, until light and lemony colored. With motor running, gradually pour in milk, then slowly add flour. Continue mixing for 30 seconds.

3. Remove pan from oven and pour batter into the hot, melted butter. Return to oven and bake until well browned, about 20 to 25 minutes.
