Recipe: Super Sandwich with Apple-Glazed Ham, Apple Chutney and Cheddar

Makes three 24-inch long sandwiches

- Apple-Glazed Ham (recipe follows)

- 1 cup apple chutney

- 1 cup light mayonnaise

- 1 tablespoon Dijon mustard

- Freshly ground black pepper

- 3 loaves (each about 24 inches) Italian- or French-style bread

- 1 pound cheddar cheese, thinly sliced (see Kitchen Note)

- 1 1/3 cups shredded iceberg lettuce

- 6 plum tomatoes, cored and sliced

- Pinch kosher salt

1. Prepare ham a day before serving. Cool, wrap and refrigerate. Slice for sandwiches the day of serving.

2. The day before serving, stir together chutney, mayonnaise, mustard and pepper. Cover and refrigerate.

3. The day of serving, cut each loaf of bread in half lengthwise. Pull out about ½-inch of the crumb from the top halves. Spread halves with chutney mixture. Layer bottom halves with ham, cheese, lettuce and tomatoes. Sprinkle a few grains of kosher salt and a little freshly ground pepper over tomatoes and replace top halves. Wrap tightly in aluminum foil and refrigerate. Cut sandwiches just before serving; each loaf makes 4 to 6 servings.

Times Kitchen Note: Beecher's Flagship cheese, a mixture of cheddar and gruyere, or Cougar Gold cheese would be good choices for this sandwich.
