4 servings - 1 tablespoon vegetable or light olive oil - 1 cup thinly sliced onions - 1 cup thinly sliced red bell peppers - 1 jar (16 ounces) Trader Joe's Roasted Pepita Simmer Sauce - 1/3 cup water - ¾ cup canned black beans, rinsed - 1 pound boneless and skinless chicken breasts - Salt to taste - Optional: 1 to 2 tablespoons chopped cilantro
1. In a 10- to 12-inch skillet, heat the oil over medium heat. Add onions and sauté 3 minutes; add bell peppers and sauté 4 minutes. Stir sauce and water into the pan and simmer gently 5 minutes. 2. Stir black beans into sauce, mixing well. Adjust sauce with a little salt if necessary. Add chicken breasts and spoon some of the sauce over them. Cover and simmer gently 12 to 15 minutes or until cooked through. Add cilantro if using. 3. Serve the chicken breasts whole with the sauce spooned over them.
