Recipe: Honey-Roasted Almonds

Preheat oven to 350 degrees. Toast almonds in the oven until they take on a warm toasted smell and turn golden brown...

Makes 4 cups

- 4 cups almonds

Coating mix:

- ¼ cup sugar

- 1 tablespoon kosher salt

Glaze:

- 1 tablespoon honey

- 1 tablespoon almond oil or butter

- 1 tablespoon almond-flavored syrup

1. Preheat oven to 350 degrees.

2. Toast almonds in the oven until they take on a warm toasted smell and turn golden brown in color, about 10 minutes. Meanwhile, put sugar and salt in a large mixing bowl and set aside.

3. In a large frying pan over high heat, combine honey, almond oil and almond-flavored syrup, and stir until mixture is boiling. Stir hot, toasted almonds into boiling glaze and cook, stirring or tossing, for 1 to 2 minutes or until glaze has dried up. Toss almonds in the sugar-salt mixture to coat, then scatter nuts over a baking sheet in a single layer. Cool completely before storing in an airtight container.
