Kitchen glossary | Just how much is a pinch?

Pinch: the amount of dry spice or salt you can hold between your thumb and forefinger — no mystery here. The size of the pinch can purposely vary; a large pinch of salt in cookie dough keeps the cookies from tasting ho-hum flat; a small pinch of ground chipotle pepper in a salad dressing adds a slightly smoky edge without cranking up the heat too high.
